Ingredients

  • 1 tablespoon of freshly squeezed lime juice
  • 2 tablespoons of Peanut Sauce
  • 0.5 cups rice noodles, cooked according to package instructions
  • 0.25 capsicum, any colour, thinly sliced
  • 0.25 cups bean sprouts
  • 1 scallion, white and light green parts only, sliced
  • Chopped fresh coriander for garnish (optional)
  • Chopped roasted peanuts for garnish (optional)
  • 1 Serving Sesame Lime-Seared Tofu

Method

  • In a medium bowl, whisk together lime juice and peanut sauce.
  • Add noodles, capsicum, sprouts, and scallion. Toss to combine.
  • Top with tofu (if using).
  • Garnish with coriander and peanuts (if using).
