Sesame Lime-Seared Tofu

- 5 to 6 oz of firm or extra-firm tofu
- 1 tablespoon of toasted sesame oil
- 1 tablespoon of freshly squeezed lime juice
- 1 scallion, white and light-green parts only, chopped
Method
- Press tofu: put it between several layers of paper towels and place heavy pan on top, and let stand for ten minutes
- Cut tofu into cubes
- Heat sesame oil in skillet over medium-high heat until hot.
- Add tofu cubes and cook for 2 to 3 minutes, until light golden brown
- Flip, and cook for 2 to 3 minutes more
- Drizzle in lime juice and soy sauce, and scatter the scallion into the pan Toss tofu a few times to coat it with the flavours
- Cook for about 2 minutes, just until liquid thicken around tofu
- Serve sprinkled with the chopped scallion
