- 1 tablespoon of freshly squeezed lime juice
- 2 tablespoons of Peanut Sauce
- 0.5 cups rice noodles, cooked according to package instructions
- 0.25 capsicum, any colour, thinly sliced
- 0.25 cups bean sprouts
- 1 scallion, white and light green parts only, sliced
- Chopped fresh coriander for garnish (optional)
- Chopped roasted peanuts for garnish (optional)
- 1 Serving Sesame Lime-Seared Tofu
Method
- In a medium bowl, whisk together lime juice and peanut sauce.
- Add noodles, capsicum, sprouts, and scallion. Toss to combine.
- Top with tofu (if using).
- Garnish with coriander and peanuts (if using).
