Tomato Basil Quinoa

Ingredients

  • 1 tablespoon olive oil
  • 0.5 yellow or red onion, diced
  • 3 garlic cloves, minced
  • 1 cup diced tomatoes
  • 1 cup quinoa
  • 1.75 cups vegetable broth
  • 0.5 cup chopped fresh basil

Method

  • In a large pot, heat the oil over medium-high heat. Add the onion and saute until tender and translucent (~5 minutes)
  • Add garlic and saute for 1 minute. Add tomatoes, quinoa, and broth and bring to a boil. Cover, lower the heat, and simmer until the liquid has been absorbed (~20 minutes).
  • Fluff quinoa and stir in the basil.

Variations

  • Swap oil for 0.25 cups water
  • Stir in 1 15 oz can of chickpeas, drained and rinsed, in step 3
