Tomato Basil Quinoa

- 1 tablespoon olive oil
- 0.5 yellow or red onion, diced
- 3 garlic cloves, minced
- 1 cup diced tomatoes
- 1 cup quinoa
- 1.75 cups vegetable broth
- 0.5 cup chopped fresh basil
Method
- In a large pot, heat the oil over medium-high heat. Add the onion and saute until tender and translucent (~5 minutes)
- Add garlic and saute for 1 minute. Add tomatoes, quinoa, and broth and bring to a boil. Cover, lower the heat, and simmer until the liquid has been absorbed (~20 minutes).
- Fluff quinoa and stir in the basil.
Variations
- Swap oil for 0.25 cups water
- Stir in 1 15 oz can of chickpeas, drained and rinsed, in step 3
