Spaghetti Sauce

Ingredients

  • 500g mince OR large can kidney beans
  • garlic
  • small amount cayenne pepper
  • 1 small onion
  • pinch salt
  • fresh oregano leaves, crushed
  • ¼ litre stock or water
  • small tin tomato soup
  • 2/3 grated carrot
  • 1 grated zucchini
  • pasta
  • Parmesan cheese

Method

Mince

  • Smear frying pan with oil
  • Fry meat, chopped onion and garlic until brown
  • Add carrot
  • Cook for several minutes
  • Drain fat off
  • Place in saucepan with stock, soup and seasoning (equal amounts of stock/water and soup)
  • Add cayenne pepper and oregano
  • Simmer for an hour
  • Top with grated cheese
  • Serve with pasta

Beans

  • Smear saucepan with oil
  • Fry chopped onion and garlic until brown
  • Add carrot and beans
  • Cook for several minutes
  • Add stock, soup and seasoning
  • Add cayenne pepper and oregano
  • Simmer for half an hour
  • Top with grated cheese
  • Serve with pasta
