Chicken Nuggets

Ingredients

  • 500g chicken breast
  • 2 eggs
  • 1 cup plain flour
  • 1 tsp ground coriander
  • 3/4 tsp dried oregano
  • 3/4 tsp sweet paprika
  • 1/2 tsp sea salt
  • Sweet & Sour sauce for dipping

Method

  • Dice chicken into approx 30 evenly-sized nuggets
  • Heat pan of oil on stove (ready for later so we can shallow-fry the nuggets when they're ready)
  • Crack eggs into bowl and mix gently with a fork
  • In another bowl, place flour, coriander, oregano, paprika, and salt. Mix until combined.
  • Dunk each piece of chicken in the egg, covering it completely. Then roll it in the flour mixture, covering it completely. Place on clean plate.
  • Cook (shallow-fry) 1/2 chicken at a time, so it doesn't stick together. Each batch will take 5-7 mins to cook. To test, cut in half one of the biggest pieces. If white, then it's ready.
  • Drain on paper towel before serving.
