Chicken Nuggets

- 500g chicken breast
- 2 eggs
- 1 cup plain flour
- 1 tsp ground coriander
- 3/4 tsp dried oregano
- 3/4 tsp sweet paprika
- 1/2 tsp sea salt
- Sweet & Sour sauce for dipping
Method
- Dice chicken into approx 30 evenly-sized nuggets
- Heat pan of oil on stove (ready for later so we can shallow-fry the nuggets when they're ready)
- Crack eggs into bowl and mix gently with a fork
- In another bowl, place flour, coriander, oregano, paprika, and salt. Mix until combined.
- Dunk each piece of chicken in the egg, covering it completely. Then roll it in the flour mixture, covering it completely. Place on clean plate.
- Cook (shallow-fry) 1/2 chicken at a time, so it doesn't stick together. Each batch will take 5-7 mins to cook. To test, cut in half one of the biggest pieces. If white, then it's ready.
- Drain on paper towel before serving.
