Ingredients
- 500g mince OR large can kidney beans
- garlic
- small amount cayenne pepper
- 1 small onion
- pinch salt
- fresh oregano leaves, crushed
- ¼ litre stock or water
- small tin tomato soup
- 2/3 grated carrot
- 1 grated zucchini
- pasta
- Parmesan cheese
Method
Mince
- In a medium/large saucepan, fry chopped onion and garlic until soft. If using mince, fry this too, until brown
- Add grated carrot and zucchini
- Fry for several minutes
- Add stock cube, tomato soup, seasoning, cayenne pepper and oregano
- Simmer for an hour
- Top with grated cheese
- Serve with pasta

- Fry chopped onion and garlic until brown
- Add carrot and beans
- Cook for several minutes
- Add stock, soup and seasoning
- Add cayenne pepper and oregano
- Simmer for half an hour
- Top with grated cheese
- Serve with pasta
