Vegie Crepes

Ingredients

For Mixture:

  • 1 head of broccoli – into small pieces
  • 1 red capsicum – thinly chopped into pieces approx 5m long
  • 10 sm/med mushrooms – thinly chopped
  • 2 med/large potatoes – into small chunks/slices
  • 2 med/large carrots – into small chunks/slices
  • 1 large onion – into small pieces
  • 2 cloves garlic - crushed
  • 2 whole tomatoes – chopped into small pieces

For Sauce:

  • 1 ½ handfuls grated cheese
  • 2 tbsp margarine
  • 2 tbsp. plain flour
  • 2 tsp tomato/garlic pesto
  • lots of milk

Method

Fry onion in frying pan for a couple of minutes, add garlic and fry until onion is soft and golden. Cook potatoes and carrots in water in a saucepan until soft. Cook mushrooms and capsicum in another saucepan until soft.

Add broccoli to potatoes/carrots mixture, and tomatoes to onion/garlic.

Make sauce and add vegies.

Make crepes.

Fill with the vegie/sauce mixture.

Serves approx 8.
