Vegan Caesar Salad

Ingredients

Croutons

  • 2 tablespoons olive oil
  • 3 slices bread, cut into small cubes (~2.5 cups)
  • 1 tablespoon taco seasoning

Salad

  • 3 cups destemmed and finely sliced kale
  • 3 coups roughly chopped romaine lettuce
  • 1 batch Hummus Caesar Dressing

Method

  • Heat oil in large skillet over medium-high heat. When hot, add bread cubes and seasoning and stir to evenly coat. Cook until bread is toasted and golden all over, about five minutes. Set aside.
  • Add kale and romaine to a large bowl and dress with Caesar dressing, to taste. Top with croutons.
