Ingredients

  • 175g sweet pastry
  • 1 lemon, grated rind and juice
  • 175g golden syrup
  • 75g breadcrumbs

Method

  • Heat oven to 200C.
  • Prepare pastry, adding half the grated lemon rind with the sugar (if you forget to add the lemon rind don't worry, it is not essential). Roll out pastry and line an 18cm pie plate. Reserve trimmings.
  • Warm the syrup, mix with breadcrumbs and the remaining rind and lemon juice.
  • Spoon the mixture into the pastry and use the pastry trimmings to make a lattice on top.
  • Bake for 15-20 minutes until golden brown.
