Tomato and Pasta Soup

- 15g butter
- 1 medium onion, chopped
- 1 clove garlic, crushed
- 2 cups water
- 1 large vegetable stock cube, crumbled
- 5 medium (500g) tomatoes, chopped
- 2 tbsp tomato paste
- 1 tbsp fresh basil, chopped
- 250g pasta
Method
Melt butter in large saucepan, add onion and garlic, stir over medium heat for approx 2 mins or until onion is soft.
Add water, stock cube, tomatoes, paste and basil.
Bring to boil, reduce heat, cover, simmer for approx 20 mins or until tomatoes are cooked.
Add pasta gradually to large saucepan of boiling water, boil uncovered until pasta is tender, drain.
Blend or process tomato mixture in several batches until smooth.
Stir in pasta (original recipe only listed 90g pasta but we like more!)
