Sweet Potato Enchiladas

- 1/2 onion, diced
- 2 cloves garlic, diced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- olive oil
- tablespoons soy sauce
- 2 cups chopped spinach
- 1 sweet potato, cooked
- 10 large tortillas
- 1 jar salsa
Method
- Heat oven to 180C.
- Saute onions, garlic, cumin, and coriander in a little olive oil until softened and starting to brown.
- Add soy sauce and spinach. Cook until spinach wilts.
- Add sweet potatoes, black beans and salt if needed.
- Place 1/2 cup of mixture in center of each tortilla. Wrap like a burrito and place, seam-side down, in a baking dish.
- Pour over salsa, cover, and back for 25 minutes.
