Sweet Potato Enchiladas

Ingredients

  • 1/2 onion, diced
  • 2 cloves garlic, diced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • olive oil
  • tablespoons soy sauce
  • 2 cups chopped spinach
  • 1 sweet potato, cooked
  • 10 large tortillas
  • 1 jar salsa

Method

  • Heat oven to 180C.
  • Saute onions, garlic, cumin, and coriander in a little olive oil until softened and starting to brown.
  • Add soy sauce and spinach. Cook until spinach wilts.
  • Add sweet potatoes, black beans and salt if needed.
  • Place 1/2 cup of mixture in center of each tortilla. Wrap like a burrito and place, seam-side down, in a baking dish.
  • Pour over salsa, cover, and back for 25 minutes.
