Summer Chickpea Salad

Ingredients

  • 1 sm red onion, peeled
  • 1-2 fresh red chillies, deseeded
  • 2 handfuls red tomatoes (~4-5)
  • 2 lemons
  • olive oil
  • 4 lge handfuls chick peas, soaked, cooked, and drained
  • handful of fresh mint, chopped
  • handful of basil, finely ripped
  • 200g feta cheese
  • sea salt and ground black pepper

Method

  • Finely slice red onion, and chillies. Roughly chop tomatoes, and mix together with their juices.
  • Dress with juice of 1 1/2 lemons, and about 3 times as much olive oil. Season to taste.
  • Heat chickpeas and add 90% of them to the bowl. Mash the remaining chickpeas and add them too.
  • Allow to marinate for a while, then serve at room temperature.
  • When serving, add mint and basil, the juice from the remaining 1/2 lemon, and crumble the feta over the bowl.
