Summer Chickpea Salad

- 1 sm red onion, peeled
- 1-2 fresh red chillies, deseeded
- 2 handfuls red tomatoes (~4-5)
- 2 lemons
- olive oil
- 4 lge handfuls chick peas, soaked, cooked, and drained
- handful of fresh mint, chopped
- handful of basil, finely ripped
- 200g feta cheese
- sea salt and ground black pepper
Method
- Finely slice red onion, and chillies. Roughly chop tomatoes, and mix together with their juices.
- Dress with juice of 1 1/2 lemons, and about 3 times as much olive oil. Season to taste.
- Heat chickpeas and add 90% of them to the bowl. Mash the remaining chickpeas and add them too.
- Allow to marinate for a while, then serve at room temperature.
- When serving, add mint and basil, the juice from the remaining 1/2 lemon, and crumble the feta over the bowl.
