Ingredients

  • Steak
  • Pepper
  • Olive oil

Method

  • Brush one side of the steak with oil and give it a good grinding of black pepper.
  • Sear the steak, oil-side down first, cooking for the desired time (see below). Brush with more oil, give it a good grinding of black pepper, turn the steak over and cook the other side.
  • Remove from the heat, wrap in foil and allow to rest for 5-10 minutes before serving.

For a rare steak, cook 2-3 minutes each side. For medium, cook 3-4 minutes each side. For well done, cook 3 minutes each side, then turn down the heat and cook for 8-10 minute, turning once.
