Pasta with Uncooked Sauce

Ingredients

  • 455g spaghetti/pasta
  • 5 nice medium-sized ripe tomatoes
  • 2 handfuls fresh basil
  • a good handful of tasty black or green olives, stones removed
  • 2 handfuls fresh rocket, washed
  • 1 flat tsp dried oregano, or a small handful fresh oregano, chopped
  • 2 tbsp balsamic vinegar
  • 6 tbsp olive oil
  • salt and pepper
  • parmesan cheese

Method

Get pasta cooking.

Chop up tomatoes and basil, and olives if you wish. Finely slice stalky bits of rocket and roughly chop the leaves. Put in a bowl with oregano. Add balsamic vinegar and olive oil and season with salt and pepper.

Throw pasta into bowl with sauce. Throw the pasta in while it is still hot. This way the pasta will cook the sauce just a little. Grate some parmesan over the top.
