- 8 oz vegan lo mein noodles
- 1 head broccoli (12 oz) cut into florets (about 4 cups)
- 1 tablespoon sesame oil
- 8 oz mushrooms, sliced
- 1 medium carrot, grated
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, minced
- 0.25 cups soy sauce
- 2 tablespoons brown sugar
Method
- Bring large pot of water to boil and cook the noodles according to packet instructions. In last 4 minutes of cooking, add broccoli to boiling water. Drain and set aside.
- Heat sesame oil in large skillet over medium-high heat. When oil is hot, add mushrooms and cook until they're brown and releasing their juices (about 5 minutes). Add carrots, garlic, ginger, and cook for 2-3 minutes.
- Add noodles, broccoli, soy sauce, and brown sugar to skillet. Toss well to evenly coat and heat through.
