Ingredients

  • 8 oz vegan lo mein noodles
  • 1 head broccoli (12 oz) cut into florets (about 4 cups)
  • 1 tablespoon sesame oil
  • 8 oz mushrooms, sliced
  • 1 medium carrot, grated
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • 0.25 cups soy sauce
  • 2 tablespoons brown sugar

Method

  • Bring large pot of water to boil and cook the noodles according to packet instructions. In last 4 minutes of cooking, add broccoli to boiling water. Drain and set aside.
  • Heat sesame oil in large skillet over medium-high heat. When oil is hot, add mushrooms and cook until they're brown and releasing their juices (about 5 minutes). Add carrots, garlic, ginger, and cook for 2-3 minutes.
  • Add noodles, broccoli, soy sauce, and brown sugar to skillet. Toss well to evenly coat and heat through.
