Jammy Apple Tarts

Ingredients

  • puff pastry
  • apples or pears: peeled, quartered, cored, finely sliced into slivers
  • jam (strawberry or raspberry)
  • sugar (enough to coat the sliced fruit)
  • orange juice (couple of tablespoons)
  • thyme

Method

  • Preheat oven to 220 degrees C.
  • Cut a sheet of puff pastry into 4.
  • Toss apples/pears into a bowl straight away with the sugar and OJ.
  • Put a tablespoon of jam in the middle of each square of pastry and fan out the fruit slices on top.
  • Fold the sides of pastry to hold it together
  • Sprinkle a little thyme over them.
  • Bake in oven until fruit has softened and pastry is crisp and golden.
