Cream Cheese Icing

Ingredients

  • 90g cream cheese
  • 30g softened unsalted butter
  • 3/4 cup icing sugar
  • 1 teaspoon finely grated lemon rind
  • 1 tablespoon lemon juice

Method

  • Combine cream cheese and butter in a blender until smooth.
  • Add sugar, and blend.
  • Add lemon rind and juice. Blend.
  • Spread evenly over cooled cake.
