Chocolate Fudge Brownies

Ingredients

  • 145g butter (a butter/margarine combo works well, too)
  • 1 1/4 cups (250g) granulated sugar
  • 65g cocoa powder
  • 1/4 rounded tsp salt
  • 1 tsp vanilla
  • 1 whole egg, 1 egg white
  • 70g flour

Method

Preheat oven to 163C. Line bottom and sides of 20cm squared tin. Boil water in small/medium saucepan. Combine butter, sugar, cocoa, salt, in heat-safe bowl. Place bowl over boiling water and mix until butter is melted and all are combined. Remove from heat and rest for 3-5 minutes. Add vanilla then eggs one at a time. Mix vigorously after each one. Add flour and mix until combined. Pour into tin and spread as evenly as possible. Bake for 20-25 mins until skewer comes out almost clean. Wait until completely cool before cutting into 16 squares.
