Burrito Bowl

- 1 cup brown rice
- 1 cup salsa
- 3 cups chopped Romaine lettuce
- 1 can whole kernel corn, drained
- 1 black beans, drained
- 1 avocado, halved, seeded, peeled and diced
- 2 tablespoons chopped fresh coriander leaves (optional)
- grated cheddar/monterey jack cheese (optional)
Serves 4.
Method
Cook rice. Divide rice into four bowls, then top with lettuce, corn, beans, avocado and salsa. Finish with coriander and cheese, if using.
