Broad Bean Salad

Ingredients

  • 1.5kg broad beans
  • 1/4 red onion
  • olive oil
  • lemon juice from 1 lemon
  • 170g feta cheese
  • 1 1/3 cups fresh mint leaves
  • sea salt and ground black pepper

Method

  • Peel broad beans twice, by shelling them from their long pods then drop into boiling water for about 30 seconds, drain, and "refresh" with cold water. The outer skin loosens and a quick squeeze pops out the bean.
  • Place podded beans into a big bowl
  • Add shaved onion, a good splash of olive oil, lemon juice, and mint. Toss well.
  • Crumble fetta into the salad, season lightly and toss.
