Black Rice Pudding

Ingredients

  • 1 cup black glutinous rice
  • 1.4 litres water
  • 1/3 cup sugar
  • 1/2 cup coconut milk to drizzle

Method

  • Add the rice and water to a pan and simmer, uncovered, for 1 hour.
  • Add the sugar and cook for an extra five minutes, stirring occasionally. The mixture should be mushy and thickened.
  • Drizzle on a little coconut just before serving. Can be served hot or cold.
