Black Rice Pudding

- 1 cup black glutinous rice
- 1.4 litres water
- 1/3 cup sugar
- 1/2 cup coconut milk to drizzle
Method
- Add the rice and water to a pan and simmer, uncovered, for 1 hour.
- Add the sugar and cook for an extra five minutes, stirring occasionally. The mixture should be mushy and thickened.
- Drizzle on a little coconut just before serving. Can be served hot or cold.
