Apple Pie Porridge

Ingredients

  • 2 cups regular oats
  • 6 tablespoons chia seeds
  • 6 tsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • 6 cups liquid (water, milk, water/milk combo)
  • 3 Granny Smith apples, peeled and cut into 1 inch pieces
  • 2 tablespoons pure maple syrup + more for drizzling
  • 1 cup unsweetened applesauce
  • 3 tsp pure vanilla extract
  • 3 tsp fresh lemon juice (optional)
  • chopped walnuts or other nuts, for sprinkling on top

Method

  • Put the ingredients (except nuts) in a large pan.
  • Cook over medium heat for until the oats turn into porridge, stirring often. The chia seeds can absorb quite a bit of liquid, so you may choose to add more to get the desired consistency.

3. Pour into a dish and sprinkle with chopped walnuts, a pinch of cinnamon, and a drizzle of pure maple syrup. Add a tiny bit of milk on top if you wish.
