Miso Soup

Ingredients

  • 3 cloves garlic, peeled and slightly crushed
  • 2 litres vegetable stock
  • 2/3 cup miso
  • 1 cup silken tofu, cubed
  • 4 spring onions, finely chopped
  • 2 carrots, grated or very thinly sliced
  • 1 tablespoon ginger, thinly sliced

Method

  • Bring stock, garlic, and ginger to boil and simmer for 10 mins.
  • Remove garlic and ginger.
  • Add miso and stir until dissolved.
  • Add remaining ingredients.
  • Simmer for two minutes.
  • Serve.
