Miso Soup

- 3 cloves garlic, peeled and slightly crushed
- 2 litres vegetable stock
- 2/3 cup miso
- 1 cup silken tofu, cubed
- 4 spring onions, finely chopped
- 2 carrots, grated or very thinly sliced
- 1 tablespoon ginger, thinly sliced
Method
- Bring stock, garlic, and ginger to boil and simmer for 10 mins.
- Remove garlic and ginger.
- Add miso and stir until dissolved.
- Add remaining ingredients.
- Simmer for two minutes.
- Serve.
