Ingredients

  • 3 tbsp marg/butter
  • 3/4 cup sugar
  • 1 1/2 cups SR flour
  • 1 large egg
  • 1/2 tsp vanilla essence
  • milk (about 2/3 cup)

Method

Milk: Enough milk to mix to a nice consistency, not so runny that it pours into the patty pans, but just plops. I estimate about 2/3 cup, but Gram never game me an amount.

  • preheat oven to 180C (I estimated this, as Gram never told me).
  • Cream butter and sugar until sugar looks dissolved, add egg and beat well.
  • Stir in sifted flour alternatively with the milk, just a little at a time, and vanilla essence. Even if you use a mixer for the butter and sugar it is best to put the flour and milk and vanilla in and beat them with a wooden spoon. That's the best way to know when enough milk is in.
  • Gram said they are supposed to make approx 2 doz. cakes. I usually make 12.
  • I cook for about 25mins, until a skewer comes out clean. Gram never said how long to cook them.
  • You may then scrape the bowl if you wish (according to Gram).

They are best on the day they are made.
