Chicken Burrito

Ingredients
- 2 tablespoons canola oil
- 1 pound boneless skinless chicken breasts, cut into bite-size pieces
- 1/2 cup chopped brown onion
- 2 tablespoons taco seasoning mix
- 1 can black beans, drained
- 1 can diced tomatoes
- 1/2 cup brown rice
- 1 cup shredded cheddar and Monterey Jack cheese blend
- Coriander, chopped (optional)
- Tortillas
Method
- Cook rice.
- Heat oil in large frying pan over medium-high heat. Add chicken and cook 3 minutes, stirring occasionally.
- Add onion and taco seasoning; cook 2 minutes more. Stir in black beans, tomatoes (undrained).
- When the chicken is cooked, stir in the rice and 1/2 cup cheese.
- Wrap tortilla into a burrito, topping with coriander and extra cheese.
