Ingredients

  • 2 tablespoons canola oil
  • 1 pound boneless skinless chicken breasts, cut into bite-size pieces
  • 1/2 cup chopped brown onion
  • 2 tablespoons taco seasoning mix
  • 1 can black beans, drained
  • 1 can diced tomatoes
  • 1/2 cup brown rice
  • 1 cup shredded cheddar and Monterey Jack cheese blend
  • Coriander, chopped (optional)
  • Tortillas

Method

  1. Cook rice.
  2. Heat oil in large frying pan over medium-high heat. Add chicken and cook 3 minutes, stirring occasionally.
  3. Add onion and taco seasoning; cook 2 minutes more. Stir in black beans, tomatoes (undrained).
  4. When the chicken is cooked, stir in the rice and 1/2 cup cheese.
  5. Wrap tortilla into a burrito, topping with coriander and extra cheese.
