Apple Oat Muffins

Ingredients

  • 2 average sized green apples (peeled or unpeeled), chopped
  • 1 cup rolled oats
  • 1 tub (approx 1 cup) vanilla yoghurt
  • 2/3 cup honey
  • 1/3 cup coconut (recipe says shredded, I usually use dessicated)
  • 1/3 cup oil
  • 1 egg
  • 1 1/2 cups SR flour
  • 2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • pinch nutmeg

Method

  1. Heat oven to 180 degrees C and prepare muffin tray
  2. Combine apples, oats, yoghurt, honey, coconut, and oil in a mixing bowl. Mix well. Let mixture stand for 10 minutes.
  3. Add egg and mix thoroughly.
  4. In another bowl, combine flour and spices, mix well.
  5. Add the flour mixture to the oat mixture and stir until just combined.
  6. Fill muffin cups (they'll be quite full).
  7. Bake for 25 minutes
  8. Cool in the tray for 5 minutes before moving to a cooling rack.
