Potato Salad

Ingredients

  • 750g potatos cut into bite-sized pieces
  • salt
  • 1 tbsp lemon juice
  • 4-5 spring onions
  • 75 ml olive oil
  • freshly ground black pepper
  • 2 tbsp freshly chopped mint
  • 2 tbsp freshly chopped parsley
  • 1 clove crushed garlic
  • pecan nuts to taste

Method

  • Put oil, lemon juice, garlic, spring onions and salt into lidded jar and shake to combine
  • Steam potatoes for about 15 mins
  • While hot, put potatoes in bowl and cover with dressing. Mix thoroughly.
  • Add pecan nuts and parsley/mint.

Chill for a few hours in fridge
