Ingredients

  • 3 cups rolled oats
  • 1 cup almonds
  • 1/2 cup pecan nuts, chopped (optional)
  • 1/2 cup shredded coconut
  • 2 tbsp sesame seeds
  • 2 tbsp pepitas
  • 1/4 cup wheatgerm
  • 1 tsp finely grated lemon zest (optional)
  • 1/3 cup vegetable oil
  • 1/2 cup honey
  • 1 cup dried apricots, chopped (optional)
  • 1 cup dried sultanas (optional)

Method

  • Preheat oven to 170C.
  • Mix oats, nuts, coconut, sesame seeds, pepitas, wheatgerm, and lemon zest.
  • In a small saucepan over low heat, warm oil and honey until they mix.
  • Pour honey mix over oat mixture, and mix thoroughly.
  • Tip mixture into a baking tin/tray and bake, stirring every 5 mins, for 20 mins or until golden.
  • Allow mixture to cool completely. Stir through dried fruit.
