Chocolate Mousse

Ingredients

  • 250g dark cooking chocolate
  • 2 tablespoons black coffee (the drink, not the substance) or water
  • 18.75g butter
  • 1 tablespoon brandy or rum
  • 4 eggs

Method

  • Cut chocolate into small pieces and melt in the top of a double boiler or in a heat proof bowl over gently boiling water.
  • Remove from heat and stir in the butter and brandy/rum, and coffee.
  • Separate eggs, add yolks to warm chocolate mixture, stirring continuously.
  • Whisk egg whites until stiff and stir into mixture.
  • Pour chocolate mousse into small mousse pots and place in refridgerator until set.
