Rice Noodles with Hot Garlic and Chilli Sauce

Ingredients

  • 1/4 cup stock
  • 6 cloves garlic, chopped
  • 1 tbsp ginger, finely chopped
  • 2 fresh red chillies, finely chopped
  • 8 button mushrooms
  • 250g dried rice noodles
  • 1/2 cup diced shallots/spring onions
  • 1 tbsp Chinese wine or dry sherry
  • 2 tsp low salt soy sauce

Method

  • Bring large saucepan of water to the boil.
  • Bring stock to the boil and stir fry ginger, garlic, shallots, chillies, and mushrooms until tender.
  • Add soy sauce and sherry to wok.
  • Add rice noodles and cook according to packet instructions (usually approx 2 mins)
  • Remove and drain noodles; add to wok.
  • Toss & stir for 1 minute.

Serves 2 adults.
