Rice Noodles with Hot Garlic and Chilli Sauce

Ingredients
- 1/4 cup stock
- 6 cloves garlic, chopped
- 1 tbsp ginger, finely chopped
- 2 fresh red chillies, finely chopped
- 8 button mushrooms
- 250g dried rice noodles
- 1/2 cup diced shallots/spring onions
- 1 tbsp Chinese wine or dry sherry
- 2 tsp low salt soy sauce
Method
- Bring large saucepan of water to the boil.
- Bring stock to the boil and stir fry ginger, garlic, shallots, chillies, and mushrooms until tender.
- Add soy sauce and sherry to wok.
- Add rice noodles and cook according to packet instructions (usually approx 2 mins)
- Remove and drain noodles; add to wok.
- Toss & stir for 1 minute.
Serves 2 adults.
