Chicken Tabouli

Ingredients

  • 1/2 cup bulgar wheat
  • 1 cup water
  • 1 bbq chicken, skin removed, flesh shredded
  • 200g cherry tomatoes, halved
  • 50g semi-dried tomatoes
  • 400g can artichokes, drained
  • 400g can chickpeas, rinsed and drained
  • 1 bunch fresh flat-leaf parsley, roughly chopped
  • 1 bunch fresh mint, roughly chopped
  • 1 tbsp olive oil
  • 2 tbsp lemon juice

Method

Soak bulgar wheat in the water for 10 minutes. Drain and press firmly to release any excess water.

Put all ingredients except oil and lemon juice into a bowl and gently mix to combine.

Whisk olive oil and lemon juice, and pour over chicken mixture. Toss, and serve immediately.
