Rhubarb, Pear, and Apple Compote

Ingredients

  • 2 cups sliced rhubarb
  • 1/2 cup sugar
  • 1 tsp grated orange rind
  • 1/4 cup fresh orange juice
  • 1 cinnamon stick
  • 1 cup cubed, peeled Royal Gala apple
  • 1 cup cubed, peeled Bartlett pear

Method

  • Combine rhubarb, sugar, orange rind and juice, and cinnamon stick in a medium saucepan; bring to a boil over medium-high heat, stirring occasionally.
  • Reduce heat and simmer for 3 minutes.
  • Add apple and cook for a further 2 minutes.
  • Add pear and cook for a further 1 minute or until fruit is tender.
  • Remove from heat and allow to cool. Discard cinnamon stick.

Serve chilled or at room temperature. Might be nice served with yoghurt.
