Basil Pesto Sauce with Pasta

Ingredients

  • 2 cups fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Olive oil
  • 3 tbsp pine nuts
  • 3 cloves garlic

Method

Boil water & get pasta cooking.

Finely chop basil.

In a mortar & pestle:

  1. Crush garlic
  2. Add pine nuts, crush
  3. Add basil, crush
  4. Add parmesan cheese, crush/mix

Mix in olive oil.

In a double boiler, heat pesto slightly (approx until cheese starts to melt).

Drain pasta, and put into pesto saucepan. Toss & serve.
