Ingredients

  • 500g cauliflower
  • 30g butter
  • 3 tsp plain flour
  • 3/4 cup milk
  • 1/2 cup grated cheddar cheese
  • black pepper

Method

Preheat oven to 200 degrees. Steam or microwave cauliflower for few mins until tender. Arrange cooked cauliflower on shallow oven-proof tray. Melt the butter in a small pan. Add flour and cook, stirring, for a minute until golden and bubbling. Add milk slowly, a little at a time. When milk has been added, keep stirring over medium heat until it boils and thickens. Take it off the heat and add almost all the cheese. Stir until the cheese has melted. Pour sauce over the cauliflower. Sprinkle the remaining cheese and black pepper over the top. Bake in oven for approximately 30 minutes.

NB: only really good as a side dish (not enough for a whole meal).
