Apple and Carrot Muffins

Ingredients

  • 1 green apple, grated
  • 1 carrot, grated
  • 1 cup rolled oats
  • 1 1/2 cups SR flour
  • 3/4 cup brown sugar, firmly packed
  • 1 egg, lightly beaten
  • 1 cup vanilla yoghurt
  • 1 tsp mixed spice
  • 1/3 cup vegetable oil

Oat topping

  • 2 tbsp plain flour
  • 1/4 tsp mixed spice
  • 1 tbsp marg
  • 1 tbsp brown sugar
  • 1 tbsp rolled oats

Method

  1. Heat oven to 190 degrees C and prepare muffin tray.
  2. To make oat topping, place flour and mixed spice in a medium bowl and rub in marg until mixture is crumbly. Stir in sugar and rolled oats.
  3. For muffins, combine flour, oats, sugar, spice, apple, and carrot in a large bowl. Add egg, yoghurt, and oil, then stir until just combined.
  4. Fill muffin cups, then sprinkle with oat topping.
  5. Bake for 25 minutes, turning tray round about half way.
  6. Cool in the tray for 5 minutes before moving to a cooling rack.
