- 1 loaf crusty bread, thickly sliced
- 4 tomatoes, chopped
- 2 cloves garlic, crushed
- 1 bunch parsley, chopped
- 1/2 tablespoon basil, chopped
- 1/2 onion, finely chopped
- olive oil
- salt and pepper to taste
Method
- Brush both sides of bread with olive oil and grill on both sides until toasted.
- Mix tomatoes, basil, onion, garlic, parsley, olive oil in a bowl.
- Put mixture on toast and season with salt and pepper.
- Serve warmed under grill or cold.
