Herb Sesame Fish

Ingredients

  • snapper fillets - skin on one side
  • fresh dill
  • parsley
  • cracked black pepper
  • sesame seeds
  • lemon zest
  • sea salt
  • olive oil

Method

Preheat oven to 190 degrees C.

Chop, grind, and mix parsley, dill, pepper, sesame seeds, lemon zest, and sea salt. Add a little olive oil and allow to rest.

Seal both sides of fish - allowing skin side 1 minute, and 2 minutes for the other side.

Spread herb paste over skin side.

Place on an oiled tray and cook for 8 to 10 minutes depending on thickness.
