Rosemary and Garlic Prawns

Ingredients

  • 3 tablespoons olive oil
  • 3lb. (1.4kg) green king prawns, unpeeled
  • 6 cloves garlic, finely chopped
  • 6-8 stalks fresh rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup dry white wine
  • 1 tablespoon parsley, chopped

Method

  • Heat oil in a frying pan and saute the unpeeled prawns and garlic for 5-10 minutes.
  • Strip rosemary leaves from stalk and add with salt and pepper.
  • Saute for a further 5 minutes.
  • Add wine and parsley and simmer for 10 minutes.
  • Serve on a heated serving dish and pour over the remaining juice.
  • Enjoy with a glass of white wine.
