- 3 tbsp marg/butter
- 3/4 cup sugar
- 1 1/2 cups SR flour
- 1 large egg
- 1/2 tsp vanilla essence
- milk
Method
Milk: Enough milk to mix to a nice consistency, not so runny that it pours into the patty pans, but just plops.
- Cream butter and sugar until sugar looks dissolved, add egg and beat well.
- Stir in sifted flour alternatively with the milk, just a little at a time, and vanilla essence. Even if you use a mixer for the butter and sugar it is best to put the flour and milk and vanilla in and beat them with a wooden spoon. That's the best way to know when enough milk is in.
- You may then scrape the bowl if you wish.
- Supposed to make approx 2 doz. cakes. They are best on the day they are made.
