- 750g potatos cut into bite-sized pieces
- salt
- 1 tbsp lemon juice
- 4-5 spring onions
- 75 ml olive oil
- freshly ground black pepper
- 2 tbsp freshly chopped mint
- 2 tbsp freshly chopped parsley
- 1 clove crushed garlic
- pecan nuts to taste
Method
- Put oil, lemon juice, garlic, spring onions and salt into lidded jar and shake to combine
- Steam potatoes for about 15 mins
- While hot, put potatoes in bowl and cover with dressing. Mix thoroughly.
- Add pecan nuts and parsley/mint.
Chill for a few hours in fridge
