Tomato Pasta Sauce

- 1 tablespoon olive oil
- 3 cloves garlic, crushed
- 2 onions, sliced
- 2 x 400g cans of chopped tomato OR 1kg fresh tomato, chopped
- 1 tablespoon sugar
- 150g tomato paste
- salt, if required
- fresh basil, to taste
- fresh oregano, to taste
Method
- Fry onion and garlic in olive oil until onion is tender.
- Add tomato, tomato paste, and sugar, and cook for 20-30 minutes until the mixture starts to thicken a little.
- Season with salt and herbs.
- Serve on pasta topped with freshly grated Parmesan cheese.
