Ingredients

  • 1 red capsicum, halved
  • 1 red onion, peeled
  • 1 red chilli, halved (optional)
  • 5 or 6 tomatoes
  • 1/2 cucumber
  • 200g feta
  • 2 cos lettuces
  • 2 or 3 handfuls fresh herbs (parsley, basil, mint, chives)
  • 2 lge tsp English mustard
  • 3 tbsp white wine vinegar
  • 8 tbsp olive oil
  • sea salt and ground black pepper

Method

  • Put all vegies through a shredder filter of the food processor, being careful to not crush it.
  • Mix mustard, vinegar, oil, salt and pepper in a small receptacle for dressing.
  • Put vegies in a large bowl with chopped herbs and crumbled feta, then mix dressing through.
