Serves 6 - 8.

Ingredients

  • 1/2 cup of rice
  • 2-3 capsicums (variety of colours), diced
  • 1 small onion, diced
  • couple of garlic cloves, diced
  • 2 chicken breasts cooked and chopped
  • 50 ml white vinegar
  • 500 g tasty cheese, grated
  • 2 lge diced tomatoes
  • 300 g tomato soup
  • 400 g corn kernels (canned or frozen)
  • 200 g sliced roast ckn, chopped

Method

  • Cook rice.
  • Pre-heat oven to 200ºC (175ºC fan forced).
  • Fry diced ckn, garlic, and onion

Layer casserole dish from bottom:

  1. Rice. Don’t press down to compact.
  2. Capsicum. Very lightly press into rice. Then 100g cheese
  3. Chicken chunks & onion mix. Drizzle vinegar over. Then 100g cheese
  4. Tomato & tomato soup, then 100 g cheese.
  5. Corn, then 100 g cheese.
  6. Sliced chicken, then 100 g cheese.

Bake for 1 hour.
