Ingredients
- 3 cups rolled oats
- 1 cup almonds
- 1/2 cup pecan nuts, chopped (optional)
- 1/2 cup shredded coconut
- 2 tbsp sesame seeds
- 2 tbsp pepitas
- 1/4 cup wheatgerm
- 1 tsp finely grated lemon zest (optional)
- 1/3 cup vegetable oil
- 1/2 cup honey
- 1 cup dried apricots, chopped (optional)
- 1 cup dried sultanas (optional)
Method
- Preheat oven to 170C.
- Mix oats, nuts, coconut, sesame seeds, pepitas, wheatgerm, and lemon zest.
- In a small saucepan over low heat, warm oil and honey until they mix.
- Pour honey mix over oat mixture, and mix thoroughly.
- Tip mixture into a baking tin/tray and bake, stirring every 5 mins, for 20 mins or until golden.
- Allow mixture to cool completely. Stir through dried fruit.
