Ingredients
- 2 cups sliced rhubarb
- 1/2 cup sugar
- 1 tsp grated orange rind
- 1/4 cup fresh orange juice
- 1 cinnamon stick
- 1 cup cubed, peeled Royal Gala apple
- 1 cup cubed, peeled Bartlett pear
Method
- Combine rhubarb, sugar, orange rind and juice, and cinnamon stick in a medium saucepan; bring to a boil over medium-high heat, stirring occasionally.
- Reduce heat and simmer for 3 minutes.
- Add apple and cook for a further 2 minutes.
- Add pear and cook for a further 1 minute or until fruit is tender.
- Remove from heat and allow to cool. Discard cinnamon stick.
Serve chilled or at room temperature. Might be nice served with yoghurt.
