Ingredients

  • 2 1/2 cups self-raising flour
  • 1/2 teaspoon mixed spice
  • 30g butter, chopped
  • 1 cup cold mashed pumpkin
  • 1/4 cup brown sugar
  • 1 egg, beaten

Method

  1. Preheat oven to 220°C.
  2. Put (sift if you can be bothered) flour and spice together into a large bowl. Rub butter into the flour.
  3. Add pumpkin, sugar and egg.
  4. Mix to form a soft, sticky dough. This will probably involved using your hands, almost kneading it in the bowl. Add a little (perhaps a tablespoon) of water if it is too dry.
  5. Turn out and press or roll out to form a round about 2cm thick. Cut into rounds about 5cm across.
  6. Place close together on a tray covered with glad bake. Bake for 12-15 minutes. Cool on a wire rack.
