Ingredients
- 1/4 of a watermelon
- 2 handfuls of fresh coriander leaves
- 2 handfuls rocket
- 2 handfuls fresh mint
- 1 sm bunch radishes, finely chopped
- 115g feta cheese
For Dressing:
- thumb-sized piece of fresh ginger, peeled and grated
- 1 red and 1 green chilli
- 2 tbsp soy sauce
- 6 tbsp olive oil
- 1 tsp sesame oil
- juice of 3-4 limes
- sea salt and ground black pepper
Method
- Cut watermelon into small cubes. Wash rocket, mint, and coriander. Put in bowl with watermelon, and finely sliced radishes.
- Put the ginger, chilli, soy sauce, olive oil, and sesame oil into smaller bowl and add just enough lime juice to cut through the oil. Season to taste.
- Dress salad and crumble feta cheese over the top.
